Description
Opolo Sauvignon Blanc comes from Hames Valley in southern Monterey County. Here, afternoon breezes moderate the valley’s warm climate, allowing for an excellent balance of ripe fruit tones and fresh natural acidity. In the California style of Fumé Blanc, a portion of our Sauvignon Blanc is barrel fermented for enhanced textures.
The 2022 Sauvignon Blanc presents bright aromas of floral citrus, papaya, lime zest, stone fruit and peach skin. The mouthfeel is clean and quenching, and the flavor profile is ripe with pineapple, tangerine, grapefruit and green apple. Suggestions of gravelly stone bring complexity to a tangy, zesty finish. Fermented in stainless steel (83%) and new French oak (17%).
Winemaker's Notes
Delightfully bright and fruit forward with apricot, nectarine, papaya and passion fruit aromas readily apparent. Textures of mineral and wet stone lead into lemongrass, green apple and tarragon with a lively and crisp finish.

Pair with poached black cod with lemongrass and basil pan sauce.
